Chef Luca Russo: Chef de Cuisine at Red Sky Restaurant and Red Sky Bar
Chef Luca Russo has more than ten years of experience in the culinary field.
He was a Sous Chef at the 2-Michelin star restaurant Zaranda in Mallorca, Spain. Before Spain, he worked at many leading Italian restaurants, including the 1-Michelin star Assaje restaurant at the Aldrovandi Villa Borghese in Rome, 1-Michelin star Giuda Ballerino Restaurant in Rome, 1-Michelin star Locanda del Pilone in Piedmont, and at the 3-Michelin star La Pergola at the Waldorf Astoria in Rome.
His commitment to high-quality ingredients, classic European techniques, and modern presentations results in delectable signature dishes, such as wagyu beef tartare with grilled marrow and summer truffle Dijon mustard, pan-seared foie gras with confit onion, brioche, and pine nuts Madeira sauce, and Glacier 51 snow fish cooked bouillabaisse style with ratatouille aromatic bread crumbs. The Klong Phai chicken is a Thai-inspired dish with porcini mushrooms and mashed potatoes.
Chef Luca’s menu speciality includes the Hitachi wagyu sirloin A4 a la plancha with potato croissant aioli and sauteed spinach. The surf and turf is a must-try with wagyu sirloin, Gundagai lamp chops, Presa pork, Alaskan king crab, Maine lobster, and tiger prawns with Hollandaise foam and red wine sauce.
